Pork Kokkinisto with Potatoes (braised in tomato)

Ingredients
- 1 kg pork (shoulder or leg), in chunks
- 3-4 tbsp olive oil
- 1-2 onions, chopped
- 1-2 cloves garlic, chopped
- 5-6 allspice berries
- 1 bay leaf
- salt
- black pepper
- smoked paprika
- 1 can (400 g) passata
- a little water
- 4-5 potatoes, in cubes
Method
- Brown the pork in a little olive oil until coloured all over.
- Add the onion and garlic and sweat until soft.
- Throw in the allspice berries and the bay leaf.
- Season with salt, pepper and smoked paprika.
- Pour in the passata and a little water.
- Lower the heat, cover, and simmer for 30 minutes.
- Lift out about half the pork and set it aside — it keeps for another meal.
- Add the cubed potatoes to the pot and cook on low for another 20 minutes, until tender.
