Pork Kokkinisto with Potatoes (braised in tomato)

  1. Brown the pork in a little olive oil until coloured all over.
  2. Add the onion and garlic and sweat until soft.
  3. Throw in the allspice berries and the bay leaf.
  4. Season with salt, pepper and smoked paprika.
  5. Pour in the passata and a little water.
  6. Lower the heat, cover, and simmer for 30 minutes.
  7. Lift out about half the pork and set it aside — it keeps for another meal.
  8. Add the cubed potatoes to the pot and cook on low for another 20 minutes, until tender.
