Method

  1. Put the pear in a pot with the wine, vanilla, star anise, cinnamon and a little sugar. Simmer until the liquid reduces to a syrup, then let it cool.
  2. Beat the egg yolks, mascarpone and powdered sugar together until smooth, then chill in the fridge.
  3. Make the coffee and let it cool.
  4. Dip the ladyfingers in the coffee and lay them out as a base.
  5. Arrange the poached pears over the biscuits.
  6. Spread the mascarpone cream over the pears.
  7. Grate orange zest on top and dust with cocoa powder. Chill before serving.
