Ingredients
For the pears
- 1 pear, sliced
- white wine, to cover
- 1 vanilla pod
- 1 star anise
- 1 cinnamon stick
- sugar
For the cream
- 4 egg yolks
- 500 g mascarpone
- 150 g powdered sugar
To assemble
- ladyfinger biscuits
- coffee, cooled
- orange zest
- cocoa powder
Method
- Put the pear in a pot with the wine, vanilla, star anise, cinnamon and a little sugar. Simmer until the liquid reduces to a syrup, then let it cool.
- Beat the egg yolks, mascarpone and powdered sugar together until smooth, then chill in the fridge.
- Make the coffee and let it cool.
- Dip the ladyfingers in the coffee and lay them out as a base.
- Arrange the poached pears over the biscuits.
- Spread the mascarpone cream over the pears.
- Grate orange zest on top and dust with cocoa powder. Chill before serving.
