Method

  1. Put both minces in a large bowl with the eggs, the soaked and squeezed bread, and the grated onion and garlic.
  2. Season generously: salt, black pepper, a good pinch of allspice and cumin, and plenty of oregano. Add a little olive oil.
  3. Mix everything together with your hands until just combined.
  4. Shape into small meatballs — keep them fluffy, not tight. That's grandma's secret.
  5. Roll each one lightly in flour.
  6. Fry in hot olive oil until browned all over. Serve.
